  • Warm tortillas hold all the delicious flavors together without falling apart.
  • The tangy burger sauce perfectly complements the richness of the beef.
  • Each bite is an explosion of savory and crunchy textures.

What You’ll Need

Gather the following ingredients to make your Easy Smash Burger Tacos:

For the Burger Sauce

  • 1/2 cup mayonnaise
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon mustard
  • 2 tablespoons minced bread & butter pickles
  • 1 tablespoon pickle brine
  • 10 cracks fresh black pepper
  • 1/4 teaspoon Worcestershire sauce

For the Tacos

  • 1 pound ground beef (80/20 fat percentage)
  • 1 teaspoon kosher salt
  • 10 cracks fresh black pepper
  • 6 (six-inch) flour tortillas (preferably flour)
  • 6 slices muenster or provolone cheese
  • Shredded lettuce
  • Chopped white onion (for topping)
  • Dill pickle chips (for topping)

Flour tortillas work best for holding moisture.

Substitutions & Swaps

  • Ground turkey or chicken for a lighter version.
  • Greek yogurt can replace mayonnaise.
  • Any cheese can substitute for muenster or provolone.
  • Use any type of tortilla, but flour is preferred.

How to Make It

Start with this simple step-by-step guide to create your tacos.

1. Prepare the burger sauce

Add all burger sauce ingredients to a bowl and whisk to combine. Refrigerate until ready to use; can be made 3 days in advance.

2. Form the beef balls

Mix the salt and pepper into a bowl. Evenly distribute it over the top and bottom of your ground beef chunk or log. Divide and roll your beef into 2 1/2 ounce balls. You don’t want to be too rough with the meat or it will be tough. Less handling is better. Place each ball on a plate and put them in the fridge until your flat top is preheated.

3. Preheat the flat top

Turn your flat top onto high heat, ungreased, and allow it to get ripping hot, hotter than you think is needed. This is important for getting crispy, juicy beef.

4. Cook the beef

Place each ball on the hot flat top and set a 6-inch tortilla on top. Use your smashing tool to press down very firmly on top of each tortilla, smashing the meat until it is as thin as it goes. Let them cook for 1 minute, then press down on top of each tortilla again.

5. Finish cooking

Let them cook disturbed for 2 to 3 minutes. Use a stiff steel spatula to scrape underneath one of the burgers to check if it is browned and crispy. If it’s not, increase the grill temperature. Once browned and crisp, flip smash burger tacos onto their tortilla side and let cook another 2 minutes to crisp up the tortilla.

6. Add toppings

Remove from the grill and top with burger sauce and your favorite toppings like shredded lettuce, chopped onions, and dill pickle chips. Enjoy!

How to Store It

Fridge: store in an airtight container for up to 3 days.
Freezer: no, best when fresh.
Reheat: warm on a skillet for about 1-2 minutes.

Tips for Best Results

  • Use a quality ground beef for the best flavor and juiciness.
  • Preheat the flat top thoroughly for optimal crispness.
  • Don’t crowd the beef balls — cook in batches if needed.
  • Let the sauce chill for enhanced flavor development.

Serving Suggestions

  • Pair with fresh guacamole and salsa for a fiesta night.
  • Serve alongside crispy sweet potato fries for a complete meal.
  • Perfect for game day or casual get-togethers with friends.
